Bolognese sauce at home - general principles of preparation

For a classic bolognese sauce, beef or pork and ground beef is used. But more and more often you can find recipes with the addition of chicken, lamb, turkey and other types of meat. It is important that it is not very oily. Minced meat is fried along with vegetables, cut into small cubes, then the dish is stewed. Vegetables in the cooking process should soften, practically dissolve in the dish.

Some recipes add milk or cream. Dry wine can also go into a real sauce. These ingredients are added alternately, evaporated each time, only after that the sauce is seasoned with tomatoes. Tomato paste or juice. The dish is stewed until the vegetables are very soft and the meat is tender, juicy.

In Bolognese, you can add a variety of spices, supplement the dish with garlic. Bolognese goes well with different herbs, but you can limit yourself to a mixture of dry Italian herbs. Dry or fresh peppers are added for pungency.

Classic bolognese sauce at home

Cooking a classic Bolognese sauce at home will take about 70-80 minutes. There are a lot of ingredients in the recipe, it is important to lay them in a certain sequence.

Ingredients

• 2 onions;

• 700 g of pork and ground beef;

• 1 carrot;

• 2 stalks of fresh celery;

• 3 tomatoes (about 500 grams);

• 160 ml of wine;

• 280 ml of milk;

• 1 tbsp. l tomato paste;

• 20 g butter;

• 25 ml of vegetable oil;

• grated parmesan, herbs, spices.

Cooking

1. Peel the onion, cut into cubes. Put butter and vegetable in a frying pan, heat. Add onion, fry for a minute.

2. Peel the carrots in small cubes, add to the pan. We cut celery in the same way, put it in a pan in a minute, pass the vegetables until half-ready.

3. Spread the mixed stuffing. We fry until it is completely light.

4. Add milk to the minced meat. You can use not very fat cow cream. We evaporate all the liquid from the pan.

5. Once all the milk has evaporated, add wine and also evaporate.

6. Dip the tomatoes in boiling water, then sharply cool the tomatoes in cold water, remove the skin, cut the flesh into small cubes.

7. Add the tomatoes to the pan as soon as all the wine has gone. Now you can add salt and pepper to Bolognese.

8. After a couple of minutes, add the tomato paste, cover the pan, simmer the sauce for about half an hour.

9. We fill the bolognese with greens, put it on the paste. We fall asleep with grated parmesan or other hard cheese.

Bolognese sauce at home with tomatoes in its juice

A simplified way to make bolognese sauce at home. Tomatoes are used in their own juice, the amount of product with juice is indicated.

Ingredients

• 500 g of minced meat;

• 600 ml of tomatoes (in their own juice);

• 1 onion;

• 30 ml of oil;

• 1 carrot;

• 1 tsp Provence herbs;

• 70 ml of wine.

Cooking

1. Cut the onions and finely chopped peeled carrots, you can use a grater. We put all this into hot oil, fry for two minutes.

2. Spread minced vegetables, you can use beef or its mixture with pork.

3. Cook the vegetables with minced meat for about five minutes, pour the wine.

4. Open a jar of tomatoes, chop the tomatoes.

5. As soon as the wine from the pan is completely evaporated, you can add the tomato mixture and immediately throw some Provence herbs. Stir.

6. If the tomatoes in their juice are not very salty, then the dish needs to be added.

7. After boiling, reduce the fire, cover the pan. Cook the bolognese for about 35 minutes on low heat.

Bolognese sauce at home with champignons and chicken

Minced chicken can also be used to make delicious bolognese at home. But for the brightness of the taste it is better to supplement it with something, for example, mushrooms.

Ingredients

• 0.4 kg of minced chicken;

• 0.25 kg of champignons;

• 0.1 kg of onions;

• 3 tomatoes;

• 3 tbsp. l oils;

• 1 tsp tomato paste;

• 50 g of white wine;

• 120 ml cream 10%;

• spices, garlic.

Cooking

1. Chop mushrooms with plates, cut onions into small cubes. Put all this in a pan with hot vegetable oil. We fry on high heat for about five minutes.

2. Now add fresh minced chicken, continue to cook bolognese over high heat.

3. As soon as the mincemeat becomes light, pour the cream on the dish, stir, reduce the heat to an average level. We are waiting for the evaporation of all moisture.

4. Now pour the future sauce with wine, wait another couple of minutes.

5. Peel the tomatoes. Finely chop the clean pulp or simply twist it with a blender until gruel.

6. Pour the tomatoes into the sauce, immediately pepper, salt, you can add Italian herbs. Mix everything thoroughly.

7. Cover the pan with minced meat and mushrooms, prepare the bolognese for about 25 minutes. 2-3 minutes before the end, add a small clove of garlic.

Bolognese sauce at home with zucchini and celery

The easy bolognese sauce option, which is very easy to prepare, turns out to be juicy, tender, but not greasy. You can replace regular zucchini with fresh zucchini.

Ingredients

• 400 g of beef;

• 200 g zucchini;

• 1 carrot;

• 2 stalks of celery;

• 1 onion head;

• 300 ml twisted tomatoes;

• spices, oil, parmesan, boiled pasta.

Cooking

1. Cut the onion into small cubes, put in a frying pan with pre-warmed olive oil, begin to fry.

2. Cut the pulp of the zucchini into small cubes, transfer to the onion, fry over high heat for several minutes until all the excess liquid has evaporated.

3. Twist the beef, put in a pan with onions and zucchini. Fry over medium heat until half cooked.

4. Pour vegetables with meat, tomato juice, salt, add aromatic Provence herbs, black and red pepper. Stir well.

5. Cover the pan. Reduce the heat a little, simmer until fully cooked. Vegetables should dissolve as much as possible in the sauce.

6. At the very end, add fresh herbs. We spread the bolognese on the pasta, sprinkle with parmesan.

Bolognese sauce at home with sour cream and tomatoes

The recipe for a gentle bolognese sauce. Instead of sour cream, you can also use cream of any fat content.

Ingredients

• 450 g of minced meat;

• 100 g of onions, carrots, celery;

• 400 g of tomatoes;

• 200 g of tomato paste;

• salt, pepper, herbs;

• some olive oil.

Cooking

1. Peel all vegetables, crumbled into small cubes no more than 0.5 cm.

2. Pour olive oil. Warm up well. We spread the prepared vegetables, fry a couple of minutes.

3. Add celery next, in a minute you can put the minced meat. Mix thoroughly, cook everything together for five minutes.

4. Remove the skin from the tomatoes, cut the tomatoes into cubes, spread them to the vegetables. Cook the sauce until the pieces of tomato are soft. If the moisture evaporates too quickly, then add a few tablespoons of water.

5. Salt and pepper sauce, season with sour cream. Stir thoroughly.

6. Cover, simmer on low heat for about a quarter of an hour. We supplement the bolognese with fresh or dried herbs.

Bolognese sauce at home with olives and pepper

Pickled olives are used for this sauce. They can be taken more than indicated in the recipe.

Ingredients

• 0.5 kg of minced meat;

• 100 g of olives;

• 100 g of onion;

• 300 g of tomatoes;

• 2 large peppers;

• 120 ml of milk;

• oil, spices.

Cooking

1. Pour oil into a skillet, put diced onions and bell pepper, prepare vegetables for Bolognese sauce together for a couple of minutes.

2. Spread minced meat, fry until half-cooked.

Bacon sauce at home with bacon

Ingredients

• 80 g of bacon;

• 300 g of minced meat;

• 100 g of onions, carrots;

• 300 g chopped tomatoes;

• 80 g of wine;
