Kefir muffins - basic principles of preparation

As you already understood, the dough is kneaded on the basis of kefir. If the muffins are sweet, the kefir is ground with eggs and only after that sugar is added. Baking soda is added immediately to kefir, and the baking powder is mixed with flour and introduced into the liquid mixture. In addition to kefir, eggs and flour, butter or good margarine are added to the dough. It is better to knead the dough with a spoon to make it light. The mass should be homogeneous, thick enough and not have lumps.

The most popular sweet muffin toppings are fruits, chocolate, berries, nuts and dried fruits. Pieces of sausages, bacon or vegetables are added to salted muffins. Fillers are added to the dough and mixed.

Vanilla, cinnamon, citrus zest and spices are used as flavorings.

Muffins are best baked in silicone molds. They are filled with dough, leaving 1/3 of the molds free.

Muffins are baked at 180 degrees for half an hour. Readiness is checked with a wooden toothpick or skewer.

The surface of the muffins can be decorated with icing, cream, or just crush with powdered sugar.

Recipe 1. Classic kefir muffins

Ingredients

kefir - a glass;

salt;

butter fat - 200 g;

white sugar - a glass;

two eggs;

flour - half a kilogram.

Cooking method

1. Melt the butter and cool to a warm state.

2. Connect kefir with eggs and shake with a fork until smooth. Add sugar, salt, and continue to shake until it is completely dispersed.

3. Pour in the resulting mixture creamy fat and mix. Pour flour in small portions and knead the dough, the consistency of homemade sour cream.

4. Lubricate silicone molds with butter and sprinkle with flour. We spread the dough in them, filling in 2/3 of the volume. We put in the oven, heating it to 200 degrees, and bake for 45 minutes. We take out the muffins from the molds, sprinkle with icing sugar and decorate with mint sprigs.

Recipe 2. Kefir muffins with apples

Ingredients

10 g of brown sugar;

three small apples;

cinnamon - 10 g;

vegetable oil - 60 ml;

walnuts - 60 g;

salt;

300 ml of kefir;

baking powder - 10 g;

egg;

white sugar - 100 g;

flour - 300 g;

vanilla extract - 5ml.

Cooking method

1. Wash apples under the tap, wipe them with a napkin and peel. Cut the fruit and core. Crush the fruit pulp into small cubes.

2. Grind the walnuts with a knife.

3. Combine kefir with an egg, vanilla extract and vegetable oil in a bowl. Shake with a whisk until a homogeneous mixture is obtained.

4. Mix flour in a separate bowl with salt, white sugar and baking powder.

5. Pour dry foods into a kefir-oil mixture and mix. Add apples and nuts to the dough and mix.

6. Insert paper inserts into the molds and place the dough in them, filling out the forms to 2/3 of the volume.

7. Sprinkle muffins with a mixture of brown sugar and cinnamon.

8. Put the molds in the oven, heating it to 180 C, for 20 minutes. Remove the prepared muffins, lay them on the wire rack and cool.

Recipe 3. Kefir with currants

Ingredients

currant - 100 g;

kefir - 180 ml;

egg;

vanillin - a bag;

sugar - 200 g;

sunflower oil - 100 ml;

baking powder - 10 g;

flour - a glass;

salt.

Cooking method

1. In a deep bowl, combine kefir with an egg and sunflower oil.

2. Separately, mix the flour with baking powder, salt, sugar and vanilla.

3. Combine the kefir mixture with dry products and mix until a homogeneous mass without lumps is obtained.

4. Remove the currant from the twigs, pick the tails, rinse under the tap and put it on a napkin to dry the berries. Introduce the currants into the dough and mix gently.

5. Lubricate silicone molds with fat and crush with flour. We fill them with dough, leaving a third of the volume free. We put the molds for 25 minutes in preheated to 200 C.

Recipe 4. Kefir muffins with cheese and ham

Ingredients

baking powder - 5 g;

salt;

fat kefir - 100 ml

baking soda;

four eggs;

cheese - 200 g;

flour - a glass;

sunflower oil - 150 ml;

ham - 150 g;

wine - 50 ml.

Cooking method

1. Combine the eggs with flour and beat well with a mixer.

2. Enter kefir, sunflower oil and wine into the resulting mass. Beat until smooth.

3. Add baking powder, soda and salt to the dough. Mix.

4. Grind the cheese on a coarse grater. Ham crumbled into small cubes. Put everything in the dough and gently mix with a spatula.

5. We fill the dough with silicone greased molds, leaving a third of the volume free.

6. Preheat the oven to 200 degrees. We send in it molds with the dough for forty minutes.

Recipe 5. Kefir muffins with chocolate drops

Ingredients

50 g of cocoa powder;

150 g of granulated sugar;

chocolate drops - 50 g;

half a packet of butter;

250 g of flour;

10 g of baking powder;

250 ml of kefir;

salt;

three eggs.

Cooking method

1. Sift the flour into a deep form and mix it with salt and baking powder. Shuffle.

2. Melt the butter, cool it to a warm state and combine with eggs and sugar. Shake until smooth with a whisk. Pour in kefir, introduce dry ingredients and mix quickly with a whisk. Add the chocolate drops and stir.

3. Lay out the first batch of dough on the molds, putting paper sockets in them, filling them almost to the top. Put in the oven. Bake at 180 degrees for half an hour.

4. In the second half of the dough, pour cocoa, mix and arrange it in tins. Bake in the same way as the first. Sprinkle with powdered sugar before serving the muffins.

Recipe 6. Kefir muffins with vegetables and cheese

Ingredients

soft cheese - 100 g;

salt;

flour - a glass;

baking soda;

sunflower oil - 50 ml;

baking powder - 10 grams;

eggs - two pcs.;

clove of garlic;

two tomatoes;

cilantro - a bunch;

kefir - 250 ml;

bulb.

Cooking method

1. Peel the onion and chop it finely. Wash the tomatoes, wipe with a napkin and cut into cubes.

2. Rinse a bunch of cilantro, shake off excess moisture and finely crush the greens.

3. Remove the husk from the clove of garlic and chop it finely.

4. Combine flour with salt, baking powder and soda. Shuffle.

5. Beat eggs with kefir, cheese and sunflower oil until a homogeneous mixture is obtained.

6. Enter the dry ingredients in the kefir mixture. Add tomatoes and chopped onions. Mix everything with a spatula until smooth.

7. Grease silicone molds. Put the dough in them, not filling to the top. Send the molds to the oven. Bake at 200 C for 20 minutes.

Recipe 7. Chocolate Kefir Muffins

Ingredients

cocoa powder - 25 g;

ground cinnamon;

margarine - 50 g;

salt;

vanillin - a bag;

kefir - 60 ml;

baking powder dough - 2.5 g;

eggs - three pcs.;

sugar - 180 g;

flour - 90 g.

Cooking method

1. Using a mixer, beat the margarine with sugar until it turns white. Enter the eggs one at a time and beat for another three minutes. Add salt, cocoa and vanillin. Pour in kefir and mix.

2. Sift the flour twice and add it to the kefir-oil mixture. Beat with a mixer for five minutes.

3. Grease silicone molds and sprinkle with plenty of flour. Lay out the chocolate dough into molds without filling them to the top. Put in a preheated oven and bake for 25 minutes at 180 C. Remove the muffins, lay them on the wire rack and sprinkle cinnamon on top.

Recipe 8. Kefir muffins with banana and chocolate

Ingredients

two glasses of kefir;

three chocolates;

four eggs;

six bananas;

one and a half glasses of sugar;

half a glass of cocoa powder;

salt;

a bag of vanillin;

a glass of sunflower oil;

baking powder;

four glasses of premium flour.

Cooking method

1. Beat eggs with sugar until a thick foam is obtained. Pour in sunflower oil, kefir and mix. Add all the dry ingredients and knead the dough, the consistency of thick sour cream.

2. Remove the peel from the bananas and cut them into circles.

3. Finish the chocolate bars in small pieces.

4. Grease silicone molds and place on a baking sheet. In each, put a couple of spoons of dough. In the center, place a circle of banana and pieces of chocolate. Pour dough on top, leaving a small space on top.

5. Put the baking tray in the oven and bake for 45 minutes at 180 C. Cool the prepared muffins on the wire rack.

Kefir muffins - tips and tricks

  • Before you put the dough in the molds, grease them with fat and grind with flour.
  • Berries and fruits, before adding to the dough, mix with flour or starch.
  • Do not fill the molds with dough to the brim.
  • You can decorate sweet muffins with icing sugar or icing, and sprinkle with sesame seeds on salted muffins.
  • Do not knead the dough for a long time, otherwise it will not rise.
